You can use whatever combination of shellfish you like in this seafood spaghetti recipe-it is poached in a savory bouillon and served with freshly cooked spaghetti.
  • 2 tsp olive oil
  •  red onion 1 small, chopped finely
  •  lemon juice 1 tbsp
  • 1 garlic clove, crushed
  • 2 celery stalks, chopped finely
  • ²⁄³cup fresh fish bouillon
  • ²⁄³ cup dry white wine
  • small bunch fresh tarragon
  • 1 lb/450g fresh mussels, prepared
  • 225 g/8 oz fresh shrimp, peeled and
  • deveined
  • 8 oz/225 g baby squid, cleaned, trimmed,
  •  and sliced into rings
  • 8 small cooked crab claws, cracked and peeled
  • 8 oz/225 g spaghetti
  • salt and pepper
  • 2 tbsp chopped fresh tarragon, to garnish

1. Heat the oil in a large saucepan and fry the onion with the lemon juice.garlic, and celery for 3-4 minutes until just softened.

2. Pour in the bouillon and wine. Bring to a boil and add the tarragon and mussels. Cover and simmer for 5 minutes. Add the shrimp, squid and crab claws to the pan, mix together, and cook for 3-4 minutes until the mussels have opened, the shrimp

are pink, and the squid is opaque. Discard the tarragon and any mussels that have not opened.

3. Meanwhile, cook the spaghetti in a saucepan of boiling water according to the instructions on the package. Drain well.
4. Add the spaghetti to the shellfish mixture and toss together. Season with salt and pepper to taste.
5. Transfer to warm serving plates a and spoon over the cooking juices. Serve garnished with freshly chopped tarragon.
