Quick Apricot Blender whip

This is one of the quickest Quick desserts you could make—and also one of he prettiest.

  • 14-ounce can apricot halves in juice
  • 1 tablespoon Grand Mariner
  • or brandy
  • ¾ cup strained plain yogurt
  • 2 tablespoons sliced almonds

Method:
1.Drain the juice from the apricots and place the fruit in a blender r or food processor with the liqueur.
2.process the apricots until they are smooth.
3.Spoon the fruit purée and yogurt i in alternate spoonfuls into four tall glasses or glass dishes, swirling them together slightly to give a marbled effect.
4.Lightly toast the almonds until they are golden. Let them cool slightly and then sprinkle some on top of each dessert.

COOK’s TIP
For an even lighter dessert, use low-fat instead of thick, creamy yogurt, and, if you prefer to omit the liqueur, add a little of the fruit juice from the can.
