potato Beef and peanut pot

The spicy peanut sauce in this recipe will complement almost any meat; the dish is just as delicious made with chicken or pork.
SERVES 4
  • 1 tbsp vegetable oil
  • 5tbsp butter
  • 1 lb/450g lean steak, cut into thin strips
  • 1onion, halved and sliced
  • 2 garlic cloves, crushed
  • 1 lb5 oz/560 g potatoes, cubed
  • ½tsp paprika
  • 4 tbsp crunchy peanut butter
  • 2½ cups beef bouillon
  • 4 tbsp unsalted peanuts
  • 2 tsp light soy sauce
  • ¾Cup sugar snap peas
  • 1 red bell pepper, seeded and sliced
  • sprigs of fresh parsley, to garnish (optional)

Method:

1. Heat the oil and butter in a flameproof casserole.

2. Add the steak strips and cook them gently for about3-4 minutes, stirring and turning the meat until it is s sealed on all sides.
3. Add the onion and garlic to the meat and cook for a further 2 minutes, stirring constantly.
4. Add the potato cubes and cook for 3-4minutes or until they begin to brown
5. Stir in the paprika and peanut butter, then gradually stir in the beef bouillon. Bring the mixture to a boil, stirring frequently.
6. Finally add the peanuts, soy sauce, sugar snap peas, and red bell pepper.
7. Cover the casserole and cook over low heat for 45 minutes or until the beef is cooked right through.
8. Garnish the dish with parsley sprigs, if desired, and serve immediately.

serve this dish with plain boiled rice or noodles, if you wish.
