Orange yogurt brulee

A luxurious treat, but one that is much lower in fat than the classic creme brulee, which is made with Cream, eggs and large amounts of Sugar

Preparation time 6-8 minutes

Cooking time 3-4 minutes

SERVES 4

    • 2 oranges
    • 2/3 cup strained plain yogurt
    • 4 tablespoons crème fraiche
    • 3 tablespoons turbinado sugar
  • 2 tablespoons light brown sugar

Orange yogurt brulee

Method:
1.With a sharp knife, cut away all the peel and white pith from the oranges and chop the fruit. Or, if there’s time, segment the oranges, removing all the membrane.
2.Place the fruit in the bottom of four individual flameproof dishes. Mix together the yogurt and e fraîche and spoon the mixture over the oranges. Preheat the broiler.
3.Mix together the two sugars and sprinkle them thickly and evenly over the tops of the dishes.
4.Place the dishes under the broiler, close to the heat, for 3-4 minutes, or until the sugar melts and turns a rich golden brown. Serve warm or cold.

COOK’s TIP
For a lighter version, simply use 1 cup low-fat plain yogurt instead of the mix ture of strained yogurt and crème fraiche.
