  • 1large onion, sliced
  • 2-4 garlic cloves, crushed

  • 14 0z/4oo g canned tomatoes
  • 1-2 tbsp sweet chili sauce
  • 1 tsp ground cumin
  • 15 0z/425 g canned red kidney beans, drained
  • 1½teaspoon dried oregano
  • 1-2 tbsp chopped fresh parsley
  • salt and pepper
  • chopped fresh herbs, to garnish
  • boiled rice and tortillas, to serve

1. Cut the beef into ¾-inch/2-cm cubes, Heat the oil in a flameproof casserole and fry the beef until well sealed. Remove from the casserole.
2. Add the onion and garlic to the casserole and cook until lightly browned. Stir in the flour and cook for 1-2 minutes. Stir in the tomato juice and tomatoes and bring to a boil. Replace the beef
and add the chili sauce, cumin, and seasoning. Cover and place in a preheated oven, 325°F/160°C, for 1½ hours or until almost tender.
3. stir in the beans, oregano, and parsley and adjust the seasoning. Cover the casserole and return to the oven for 45 minutes. Serve sprinkled with herbs and with boiled rice and tortillas.
