This unusual chicken and shrimp  dish, with its mixture of chicken and shellfish, is typically Spanish. The basis is sofrito: a slow-cooked a mixture of onion and tomato in olive oil. with garlic and bell peppers.
  • 4 chicken quarters
  • 1 tbsp olive oil
  • 1red bell pepper
  • 1 medium onion
  • 2 garlic cloves, crushed
  • 14 0z canned chopped tomatoes
  • scant 1 cup dry white wine
  • 4 tbsp chopped fresh oregano
  • salt and pepper
  • 1 cup chorizo sausage
  • 1 cup peeled shrimp
  • rice, to serve

1. Remove the skin from the chicken quarters. Heat the oil in a wide, heavy pan and saute the chicken, turning occasionally until golden brown.
2. Using a sharp knife, seed and slice the bell pepper and peel and slice the onion. Add the bell pepper and onion to the pan and sauté gently to soften.
3. Add the garlic with the tomatoes, wine, and oregano. Season well with salt and pepper, then bring to a boil.cover and simmer gently for 45 minutes or until the chicken is tender and the juices run clear when the thickest part of the chicken is pierced with a skewer.
4. thinly slice the chorizo and add to the pan together with the shrimp then simmer for another 5 minutes. Adjust the seasoning and serve with rice.
