  • 4 eggs. separated
  • 2 tbsp light cream
  • 1 tbsp sugar
  • 1tbsp butter
confectioners’ sugar, for dredging
For the filling
  • 1 Eating an apple, peeled, cored and sliced
  • 2 tbsp butter
  • 2 tbsp light brown sugar
  • 3 tbsp light cream

Method:

  1.  To make the Apple souffle omelette filling saute the apple slices in the butter and sugar until just tender stir in the cream and keep warm.
  2.  Beat the egg yolks with the cream and sugar .beat the egg whites until stiff, then fold into the yolk mixture .preheat the broiler.
  3. melt the butter in a large heavy frying pan, pour in the souffle mixture and spread evenly.cook until golden underneath, then brown the top under the broiler.
  4. slide the omelet onto a plate add the apple mixture then fold over .sift the confections’sugar over thickly, then mark with a hot metal skewer. serve immediately.
